Crab Cakes
1 lbs. lump crab meat 1 stick butter
1 large egg 1 small chopped onion
1/2 cup bread crumbs 1 chopped green onion
1 tbsp mayonnaise 2 stalks chopped celery
salt & pepper to taste 1/4 cup vegetable oil

In large bowl, mix crabmeat, egg, bread crumbs, mayonnaise, salt and pepper.  Set aside.  Saute onion and celery in 1 stick of butter until tender, about 5 minutes.  Remove from fire and add to crab mixture; mix thoroughly.  Form mixture into patties.  Pour vegetable oil into a skillet and cook until heated.  Fry patties in oil and lightly brown both sides.  Serve immediately.
