Boil spaghetti in salted water
until done; draine, rinse and set aside. Meanwhile, saute
onion, bell pepper and celery in oil until tender. Add
tomatoes, tomato paste, seasonings, salt, pepper, hot sauce and
stock. Bring to a boil. Reduce and simmer 30
minutes. Add tailmeat and simmer 20 minutes. Serve
over cooked spaghetti.
